Currants, also known as black raisins or “Super-Sayaki,” are dried, seedless black grapes primarily grown in Uzbekistan. These raisins are renowned for their exceptionally high antioxidant content, making them a powerful source of health-boosting compounds such as polyphenols, flavonoids, anthocyanins, proanthocyanidins, procyanidins, and resveratrol. The deep blue or black color of currants comes from the type of grape used, which is considered superior in antioxidant and anthocyanin content compared to white grapes. The drying process of currants is done under low humidity and moderate temperatures, which helps preserve the natural antioxidants, vitamins, and nutrients found in the fresh grapes. This makes currants not only a delicious, naturally sweet snack but also a nutrient-packed addition to various dishes, offering both health benefits and a distinctive flavor.
